Boring Boca Upgrade

Although I hate to admit it, as hard as I try to eat local, fresh food, even I break down and buy a few “easy” things at the grocery store to have on hand.

Boca faux “chicken”(meatless) patties are one such thing I like to have on hand for a quick lunch.

With a little imagination, five minutes and some fresh local/home-grown produce you can turn a boring boca into a tasty delight even then snobbiest of foodies wouldn’t question!

Pictured below is a Boca ”chicken”, sliced in half, thick slice of artisan bread, broiled with a little mozzarella and topped with a fresh tomatoes and basil.

For the topping I just threw a couple of cut up tomatoes from the garden(whatever you have on hand) in a sauce pan with a little balsamic vinegar, olive oil, salt, pepper, heat to a quick simmer and top fresh basil!

Grab a fork and knife and dig in!

New beginings!

Not only am I switching over to wordpress, It’s time to order those seeds and plot out the garden!

A little back story.

Last spring, I put my career on the back burner and applied and was accepted into an organic farm apprentice program in St. Louis. I then also took a job working for pennies on another organic farm located in Augusta. And we decided to expand our garden at our family’s property up north in Lincoln County.

To say I was busy is an understatement! But the skills and knowledge I acquired were more than worth spending every daylight hour last year playing in the dirt, traveling farm to farm! I had fun, made new friends, eat great and lost weight!

Then came Lucy. I had to come back down to the real world and start working again and playing in the dirt & weeds less! …Or do I? I realize that driving 45-115 minutes to garden is out of the question now that I am working and caring for the baby, but that doesn’t mean I have to stop gardening! I am planning on turning our suburban back yard into a terraced and raised bed garden rivaling the harvest I hauled in last year.

First step is plotting and planning what to grow and what not to grow, goodbye swiss chard, there is no room for you here! Only the essentials this year, other than the joy of eating fresh veggies, our main gola is canning, freezing and baby food.

I am most excited this year about the Chocolate Habanero because I have never tried it before, the Missouri Pink Love Apple because it is my favorite tomato and of course all of my squash! Perfect for pasta, pie, ice cream, baby food, etc.!

Stay tuned over the next weeks as I post photos from the process of turning our backyard into a mini farm, make baby food, canning, freezing, etc.

Squash pasta!

So for Christmas my super talented Aunt Suzie gave me some of her homemade squash flour!
For the past few years Erin and I have been making our own pasta but have never made any flavored pasta until now, and squash is our favorite veggie, so we were stoked!
Mixed equal parts squash flour and semolina flour.(Bob’s Red Mill, available at most grocery stores)
Followed basic pasta recipe.
Made lasagna noodles.
Browned some Elk meat, onions & garlic.
Thawed out some of our homemade garden tomato sauce.
Prepared noodles.
Assemble, bake, serve, enjoy!
Other then the real stuff in Italy, this is the best pasta I have ever had, the squash gave the pasta a deep richness and light sweetness that pushed this lasagna way past some Tuesday night comfort food and into a dish that fellow foodies dream about at night!
I am hooked, I will definitely be making my own veggie floor this year with the treats from our garden, stay tuned!

Welcome home!

Lily and Lucy finally met today…and as expected, Lily sniffed her once, and then proceeded to go on about her day full of ball playing and bone chewing, ignoring our newest addition!

In an attempt to bring the two together, Lily decided to give Lucy an early Christmas/birthday/welcome home present as seen above in the photo!
